THE BEST GLUTEN-FREE, VEGAN LO MEIN ON THE PLANET

Looking for a super-fast, BEST GLUTEN-FREE, VEGAN LO MEIN ON THE PLANET, Asian- inspired vegan dish? This gluten-free, vegan, lo mein is the nutrient-dense deal! Cooks up in less than 10 minutes and costs about $2-4 for two servings.

Load it up with any veggie you choose. I used:

Zucchini: high in the antioxidant vitamin C, which may help the lining of your blood cells function better, lowering blood pressure and protecting against clogged arteries

Onions contain antioxidants and compounds that fight inflammation, decrease triglycerides and reduce cholesterol levels 

Portabello Mushrooms never eat raw as they carry traces of carcinogens in the raw form

Red Peppers, higher than green or yellow – Antioxidant vitamins A and C help to prevent cell damage, cancer, and diseases related to aging, and they support immune function


Vegan Lo Mein

Gluten-Free

2 Servings

Ingredients
Pasta Zero Fettuccine (you’ll find it in the vegan, refrigerated produce section of your supermarket – Publix)
1 Medium Sized Zucchini, sliced
8 Baby Portobello Mushrooms, sliced
1/2 Medium Onion, sliced thinly and sauteed
5 Handfuls of Spinach (I do not prefer the baby variety for this recipe, too wilt)
1/2 Red Pepper, Sliced thin
6 tablespoons Grapeseed Oil
1/2 cup Coconut Aminos – Teriyaki Sauce by Coconut Secret of Braggs (Spouts & Whole Foods)
Option — Add meat, poultry, and other veggies

Option — Exchange PASTA ZERO with Farro (I found a precooked variety at Target _ LOVE!!)

Prep It:
1. Slice and prep onions, and get them into a hot pan with grapeseed oil. While they are cooking slice and prep the rest of the veggies, and prep any others you want, like baby corn, water chestnuts, garlic, or anything.

2. Add 1/2 cup of Aminos to veggies, and saute till they are the way you like them. For me, it’s about 1 minute because I like them semi-crunchy but heated. 

3. While they are cooking, follow directions on PASTA ZERO, which is to simply rinse thoroughly. I think I rinsed mine for about 1 minute. 4. 4. Add PASTA ZERO to the pan with all of your veggies and heat. I added another 1/3 cup of Aminos. Serve and enjoy
