Apple Crisp Oatmeal

This is an instant-pot recipe, perfectly timed for your 17 minute workout. Throw the ingredients in the pot, set the timer and get your workout in while breakfast cooks!

 1 cup Steel cut oats (gluten free if desired/necessary)
 1 cup Water
 1 ½ cups Dairy free milk
 1 pinch Sea Salt
 1 tsp Vanilla
 1 Apple roughly chopped

Combine listed ingredients except for vanilla in an Instant Pot and stir. Set pot to pressure cook on high for 20 minutes (it will take about 8 minutes to come up to pressure). Allow pressure to release naturally for 10 minutes before opening pot. Stir in vanilla and serve. I like to sauté an additional chopped apple with 1/2 tsp of cinnamon in a Tbsp of water until softened and serve over oatmeal, then top with a couple spoons of granola and a drizzle of maple syrup. It reminds us of apple crisp, suitable for breakfast or dessert.
