Banana Oatmeal Blender Pancakes. These only take a minute to make in the blender, and they are free of flour, sugar, and eggs!
Makes approximately 9 4-5 inch pancakes.
- 2 medium ripe bananas
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1 1/2 oatmeal
- 1/2 teaspoon ground cinnamon
Optional: Add Blueberries or any other berries you love
Place all of the ingredients in a blender and process for about one minute until completely blended.
Let sit for 1-2 minutes while you heat up your pan.
Ladle batter onto a heated griddle or pan.
Cook until bubbles form in the top, and flip to finish cooking.
Keep warm in a 200-degree oven while you finish cooking the batter.
NOTE: These Banana Oatmeal Pancakes are great to freeze and then defrost in the microwave or oven. All
